Gluten free madeleines


It’s time for afternoon tea find a sunny corner. Grab your favourite book or relish in some solitude alone with your thoughts. Enjoy some tea and a madeleine.

3 eggs
1/2 cup castor sugar
The zest of 1 lemon
3/4 cup gluten free flour
1/4 teaspoon gluten free baking powder
60 g melted and cooled butter or vegan butter if you want them to be dairy free 
Icing sugar to dust them


In a bowl place eggs lemon zest and sugar mix with an electric hand mixer. Then fold in other ingredients by hand.  Pour mix into Madeleine moulds and place in a preheated oven. 180 c. Bake for 15 to 18 minutes . Dust with icing sugar. Enjoy.
