Savoury quinoa muffins



These are super easy and a great way to use up leftover cooked quinoa. You could make multiple variations on the flavours depending what you have. They are very yum.

1 cup cooked quinoa
2 eggs
1/2 cup grated cheese
Chopped coriander
1/2 small red onion diced
4 cherry tomatoes diced
Salt and pepper to taste

Place all ingredients in a bowl and mix well. Spoon into silicone muffin tray and bake in moderate oven for about 25 minutes. These qualities makes 4 muffins.
