Quinoa fruit cake

 This is a great healthy alternative to lots of fruit cakes. It uses quinoa flour and is gluten and dairy free. Super easy to make. 


1 and 1/3 cups boiling water

4 tea bags ( I used earl grey)

500g mixed dried fruit

1/2 cup brown sugar

1/2 tsp mixed spice

1 cup quinoa flour with 1 tsp baking powder added to it. 

2 beaten eggs


Add the tea bags to the boiling water brew. Then remove tea bags. Place dried fruit in a bowl and pour over tea. I left the mix overnight but a few hours should work too. 

Once your fruit is ready prepare dry ingredients. Place flour mixed spice and sugar in bowl stir to combine. Then add fruit mix and the beaten eggs. Combine ingredients and pour into a lined cake tin. Bake in a preheated moderate oven for one hour. Cool in tin.
