Quinoa Cookies

These are my take on the Australian Anzac biscuit. Instead of using oats I’ve used quinoa flakes as I can’t eat oats. I’ve made them dairy free and vegan as well as being gluten free. 

I love taking favourite foods from my childhood and making them healthy and giving them a modern twist. 


1 cup quinoa flakes 

1 cup Glutenfree plain flour 

1 cup desiccated coconut 

Place the above ingredients in a mixing bowl. In a saucepan place the items listed below. 

1/2 cup muscovado sugar

1/2 cup coconut oil 

3 tbsp brown rice syrup 

3 tbsp water

Heat the items over a low heat till melted and combined. Take off heat and stir in 1 tsp bicarbonate of soda. Then combine with dry ingredients. Roll in balls and place on baking trays flatten balls with a fork. Don’t put them to close together allow room for spreading. Bake in moderate oven for about 15 minutes. Serve with a big mug of tea.
