Chocolate banana bread 

   
 I love this recipe it’s healthy and chocolate both things that are important to me. It makes a great snack anytime and good with a coffee for a quick weekday breakfast. It’s gluten and dairy free also free from refined sugar.  

 Ingredients 

2 very ripe large bananas

2 cups almond meal

1/3 cup cornflour(makes sure to use gluten free)

3 large free range eggs

2 tbsp honey

2 tsp Apple cider vinegar 

Pinch salt

1 tsp bicarbonate soda

1/3 cup olive oil

1/2 cup cocoa powder

1 tsp vanilla 

Method

You will need two bowls. Place all dry ingredients in one and mix. In the other bowl place bananas and mash well with a fork. Then add all other wet ingredients and mix well. Then combine the two bowls together. I bake it in a silicone loaf pan as this makes it easy to turn out when cooked.Bake in a preheated oven set to 160c. Takes about 50 minutes to cook. 

Optional add is sprinkle top of loaf with small chocolate chips before baking.
