This is a very easy recipe that uses ingredients that you probably have on hand. I have included a few modifications I make sometimes to make a healthy slice for lunch boxes.
Ingredients
Wet
150 g melted and cooled butter or vegan butter for dairyfree
1 egg
2 teaspoons vanilla extract
1/2 cup milk can use plantbased
Dry ingredients
1/2 cup brown sugar or rapadura sugar
1/2 cup plain gluten free flour
1/3 cup self raising gluten free flour
1/4 cup cocoa
3/4 cup desiccated coconut
Method
Mix the wet and dry ingredients in two separate bowls. Then blend the two bowls together. Pour into a lined slice tin. Bake in preheated oven set to 160c for fan forced. Takes about 30 minutes.
Chocolate icing
1 cup icing sugar
1/4 cup cocoa powder
20 g softened butter or coconut oil
1 and 3/4 tbsp hot water
I mix the icing with an electric mixer to get it nice and smooth. Spread over cooled slice and top with some extra desicated coconut to decorate.
Modifications to make healthy cacao lunch box slice.
Change the 1/2 cup plain flour to 1/2 cup quinoa flour. Change the cocoa powder to cacao powder. Omit the chocolate icing and sprinkle some cacao nibs over slice before baking.

Hi the plain flour can be subbed I’ve used other flours successfully. Just need to still use the self raising flour.

And 10 Tablespoons of butter in the cake? I just converted on-line ounces to grams, but that seems like a lot for how little flour there is.

Just use half a cup of butter ten table spoons seems like a lot. I used coconut oil instead of butter the other day and it was really good.
