Dairy free cherry cheesecake 

This recipe is quick to make and very tasty. Keep it in the freezer and defrost about 15 minutes before serving. Or eat it semi frozen it delicious like that. 
Base

1/2 cup walnuts 

1/2 cup shredded coconut 

1/2 cup pitted medjool dates

Put all the above items in food processor and blend until combined. Then press into silicone loaf pan. Pop in freezer while making the topping. 

Topping 

2 cups of cashews soaked in water overnight then drained 

1/3 cup melted and cooled coconut oil 

1/2 cup honey or maple syrup for vegan

1 tsp vanilla bean paste 

1/2 tsp cardamon 

1 cup thawed cherries 

1/4 cup coconut cream or milk

Process the cashews first until smooth then add cherries process some more and then add all ingredients. Process until combined and spread over the base put in freezer to set. I like to drizzle some melted raw chocolate over slices and decorate with some freeze dried cherries. Enjoy
