Raw chocolate cake

Like lots of people I like chocolate but I  also like being healthy. So this new recipe is both chocolate and healthy and delicious. 
Ingredients 

Base

1/2 cup pecans

1/2 cup dessicated coconut 

1/2 cup medjool dates

Blend the above in a food processor then press into round springform pan. Lined with baking baking. When you’ve done this pop it in the freezer while you make the topping. 

Topping

1 and 1/2 cups pre soaked cashews. You will need to soak cashews in water overnight then drain them before use. 

40g raw chocolate I used an orange flavoured bar. Have fun experimenting with different flavours. 

1/3 cup melted coconut oil 

1 very ripe avocado 

1 tsp vanilla bean paste 

1/3 cup maple syrup 

1/4 cup cacao 

2 tbsp coconut cream

Method. Place cashews in food processor and blend takes a little while to get a smooth paste. While this is happening melt coconut oil and raw chocolate together being careful not to burn. Let the chocolate mix cool a little before use. Once your cashews are smooth add all other ingredients but the chocolate and coconut oil mix. Blend cashew mix and ingredients the slowly pour in your melted chocolate and coconut oil. When it’s all smooth pour over your base and put in freezer to set. When your ready to serve get out freezer and get out of pan while frozen. Takes about 20 minutes to defrost at room temperature. I like to keep it sliced in freezer for easy snacks.
