Lemon cake 

This cake is light and moist and has a lovely lemon flavour. Of course it’s gluten free. 
125 g softened butter

3 eggs

Grated zest from one lemon 

2/3 cup castor sugar

1 and 1/2 cups gluten free self raising flour 

1/3 cup milk with 3 tsp lemon juice added leave for a few minutes before use. 

Method 

I beat this cake by hand. Beat together the butter lemon zest and sugar. When creamy add eggs then milk. Mix well after each addition. Lastly add sifted flour. Mix and pour into silicone loaf pan. Bake in preheated oven set to 160c takes 45 to 50 minutes. Coolnon wire rack. 

Drizzle icing

3/4 cup icing sugar 

1 1/2 tbsp lemon juice 

Mix well pour over top of cake.
