Banana cake with passion fruit icing 

Banana cake 
I’ve made this cake several times the last few weeks and it’s become a family favourite. It’s great without the icing if you want to reduce sugar. 

125 g softened butter 

2 eggs

2 well mashed bananas

2/3 cup soft brown sugar 

2 tbsp hot milk

1 tsp bicarbonate soda

3/4 cup gluten free self raising flour 

1 cup gluten free plain flour 

I make the cake in one bowl and hand mix it. Start by beating sugar and butter together when mixed well add eggs. Then stir in banana. Place bicarbonate soda in milk and allow to cool a bit then add to mix. Lastly sift in your flours and mix well. Pour into a silicone loaf pan. Bake in preheated oven set to 160c for approximately 50 minutes. Cool in pan for 5 minutes then turn out onto wire rack to cool. 

Passion fruit icing 

1 and 1/2 cups icing sugar 

1 tsp dairyfree spread

1 and 3/4 tbsp passion fruit pulp

Mix ingredients together and spread over cooled cake.
