Banana and peanut butter loaf 

I know I’ve posted banana things quiet a few times before but they’re so delicious and I can’t stop wanting to create new banana recipes. This new recipe is very healthy and delicious toasted for breakfast. Great for lunch boxes. 


Ingredients 

1 and 3/4 cups almond meal

1/3 cup tapioca flour 

1 teaspoon bicarbonate soda

Mix the above ingredients in a bowl. In a separate bowl mix together the following. 

2 well mashed bananas

1/3 cup peanut butter 

2 tablespoons maple syrup 

1/3 cup olive oil 

1/4 cup plant milk with 1 tsp apple cider vinegar added to it

3 well beaten eggs add these last
Then combine the two bowls together and pour into a silicone loaf pan. Cook on a preheated oven set to 160c takes 45 to 50 minutes. Cool on a wire rack.
