Raw vanilla and chocolate ganache pie

Every time I do a vegan raw dessert it gets lots of attention and I understand why

Easy to make

Raw desserts are popular with everyone. Even if your family and friends aren’t on a plantbased diet I’ll bet they’ll love a raw dessert. 

Base layer
1/2 cup pecans 

1/2 cup medjool dates

1/2 dessicated coconut 

Place above items in food processor and blend until it’s fine crumbs. Press base into spring form pan. Place in freezer while you make next layer. 

Vanilla cream 

1 cup of soaked and drained cashews (best result soak cashews overnight)

1/4 cup coconut cream 

1 heaped tsp vanilla bean paste 

1/3 cup coconut oil melted and cooled 

1/4 cup maple syrup or rice malt syrup 

Place all items in food processor and process until completely smooth. Then spread over your base place back in freezer while you make topping. 

Chocolate ganache 

1 cup cashews prepared as above 

1/2 cup cacao powder 

1/2 cup maple syrup 

1/3 cup melted and cooled coconut oil

1 tsp vanilla 

Place the items in your food processor and process until smooth then spread over top of your pie. 

Place in freezer for about 4 hours until set. Thaw for about 15 to 20 minutes before serving. Enjoy
