Carrot cake muffins

These muffins are so delicious and perfect with a morning cup of tea or to pop in lunch boxes. The recipe makes six muffins so just double mixture for more. They’re low in sugar and fat. 
Ingredients 

1 cup grated carrot 

1 organic egg

1/4 cup coconut oil 

1/4 cup Apple sauce 

1 tsp pure vanilla extract 

1/3 cup sugar 

Pinch salt

1 cup gluten free self raising flour 

2 tsps cinnamon 
Method 

You need to mix your wet ingredients in a food processor to get a smooth consistently. 

In your food processor place your sugar and coconut oil process until smooth and well combined. Next add apple sauce,egg,vanilla and carrot. Give a quick process to combine. 

In a bowl place your dry ingredients the flour,cinnamon,salt give a whisk to combine. Next slowly add your wet ingredients stirring with a wooden spoon to combine. 

Pour into silicone muffin pan to bake. 

Bake in preheated oven set to 180c for 16 to 20 minutes. Check with a toothpick before removing from oven. 
Recipe is gluten and dairy free. Low in sugar and fat.
