Vegan chocolate ganache tart

This chocolate tart is amazing if I do say so myself. It’s just eight ingredients and so easy to make. It’s so rich no one will believe it’s a healthy dessert. I’ve dressed it up with some little dried roses but berries would work well too. 
You will need a 20cm flan tin with removable base. Oblong or round. 

Lightly spray tin with cooking spray. 

Crust

2 cups almond or hazelnut meal 

2 tablespoons melted coconut oil
2 tablespoons maple syrup 

Place your base ingredients into food processor and give a quick process till ingredients come together. Take the mixture and press it evenly into spring form pan or flan tin with loose bottom. Line base with baking paper. 

Bake base in preheated oven set to 160c for 15 minutes. Allow to cool before filling. 

Chocolate ganache filling

1 cup cashews that have been soaked overnight then drained

1/2 cup cocoa powder 

1/2 cup maple syrup 

1/3 melted coconut oil

1 teaspoon pure vanilla extract 

Place all filling ingredients into high speed food processor. Process until smooth. Pour into cooled tart case and pop in freezer to set.
