Paleo breakfast buns

Processed with VSCO with hb2 presetThese buns make the perfect breakfast. They’re like a cross between an English muffin and fruit bread. When I had to go gluten-free these were two baked goods I really missed. I’ve been inspired to do a lot more baking after watching the great British bake off. In Australia lots of people aren’t regular bakers I hope my easy recipes will inspire people to bake a bit more. I think the best part about baking for me is to know exactly what I’m eating. 1 1/2 cups almond meal

1/4 cup coconut flour

2 teaspoons baking powder and 1/2 teaspoon bicarbonate soda

pinch salt

2/3 cup mixed dry fruit

1 teaspoon cinnamon and 1/2 teaspoon nutmeg

1 tablespoon honey

2 tablespoons butter

4 eggs well beaten together

1/2 cup nut milk


you will need a jumbo muffin pan. Preheat your oven to 180c

grease and line your muffin pan

melt the butter and honey together and set aside to cool a little.

In a large bowl place flours,baking powder and soda,sultanas and peel,spices and salt. Mix well

in another bowl mix all your wet ingredients, eggs,milk,honey and butter mix

pour your wet ingredients into dry and mix well  then divide mix evenly in muffin pan ,it makes 5 large muffins similar in size to an English muffin

flatten tops of muffins with your finger so they bake evenly

place in oven and bake for 25/30 minutes

leave in pan cool

great served with homemade jam
