Hi my second blog post in a day this never happens. I struggle to make a bold post each week but I’ve had a good week and had two amazing new recipes to share. What I love is that they tick all the boxes that lots of my followers want. That’s gluten-free/paleo/vegan it’s a challenge baking to suit all this but I think I’ve done well this week. Ok so this is a cookie recipe I make all the time and you can change choc chips to nuts or dried fruit to change recipe. I add cinnamon sometimes to which tastes great.
180g almond meal
2 1/2 tablespoons coconut oil melted
2 tablespoons maple syrup (you can use honey if not vegan)
1 teaspoon vanilla bean paste
1/4 teaspoon baking powder
pinch sea salt
3 tablespoons cacao nibs or small dairy free choc chips
preheat oven to 170c and line a baking tray with baking paper.
Take a bowl and combine all ingredients. Roll mixture into balls 1 tablespoon each ball. Press down to flatten and place on lined tray. Allow room for spreading.
Bake for 15 to 20 minutes depending how you like your cookies. Fudgy or crunchy.
Play around with flavours just keep base recipe the same. Last week I made crushed pecan and orange zest cookies using this recipe. My favourite is with the cacao nibs as it’s such a healthy recipe. Happy baking. Tag me on Instagram if you make any of my treats. 💕
