Gluten and refined sugar free banana loaf

No reason just been baking lots old favourites and trying out recipes from the many cookbooks I’ve collected over the years. It’s autumn here and we are currently enjoying a last blast of warm weather before the cooler days begin. 

This recipe is one I’ve been making for years and it’s great for lunch boxes. Also lovely with some icing for a special treat. I make it in a silicone loaf pan it’s a very quick and easy recipe. 

Banana loaf

125g soft butter

3/4 cup rapadura sugar

2 eggs

2 well mashed soft bananas

2 tablespoons warm milk

1 teaspoon bicarbonate soda

1 cup gluten-free plain flour

3/4 cup gluten-free self raising flour


1/ preheat oven to 180c. Get your silicone loaf pan ready.

2/ beat sugar and butter together with electric mixer then add eggs one at a time. Next stir in your well mashed banana do this with a wooden spoon.

3/ combine warm milk and baking soda. Stir this into your mix. Lastly sift in your flours and mix in with wooden spoon. Pour into loaf pan. Bake in oven for 45 to 50 minutes. Cool on wire rack.
