Paleo honey breakfast muffins

B4948E1C-3309-43FB-B294-C62F267697E4.jpegThese little muffins are great with sweet or savoury toppings. I love them lightly toasted and spread with mashed avocado. Although we don’t follow a strict diet of any sort other then gluten-free,I love paleo baking. The thing I love about paleo baking is it’s so clean and healthy. Also super easy these are one bowl mix. I make them in silicone muffin pans. Great for lunch boxes or with a bowl of homemade soup too.

2 cups almond meal

1/3 cup tapioca flour

1/4 tsp salt

1 tsp bicarbonate soda

1/2 tsp baking powder

3 eggs

1/3 cup olive oil

1/4 cup tinned coconut cream

2 tsp apple cider vinegar

2 tablespoons honey

method

place dry ingredients in your bowl and give a stir to mix. Then add your wet ingredients and mix well. Pour into silicone muffin pan. I made ten with this mix.

Bake in a preheated oven set to 160c for 15 to 20 minutes. Cool in muffin pans.
