Healthy banana bread

2592173C-95FA-49D2-B0DB-91287030C39C.jpegI love banana breads and cakes. I know I’ve posted recipes for both in the past but this is my favourite at the moment. Besides being delicious it keeps really well wrapped in the fridge. So great to make on a Sunday for lunches during the week.

Recipe

ingredients

1 cup well mashed very ripe banana (about 2 large bananas)

3 eggs

1/4 cup olive oil

2tablespoons maple syrup

1 teaspoon vanilla extract 1 teaspoon pumpkin spice mix (or cinnamon)

1/2 teaspoon bicarbonate soda

2 teaspoons apple cider vinegar

2 cups almond meal

1 heaped tablespoon flaxseed meal

method

really easy to make  place all ingredients but your almond meal and flax meal into a bowl  mix well. When your ingredients are well mixed stir in almond meal and flax meal. Pour into a silicone loaf pan or a lined loaf tin and bake for 45 to 50 minutes

oven temp 160c fan forced

allow to cool a little before turning out of pan
