Hi so the last few years I’ve put on a little weight. (Who would’ve thought being a food blogger could make you gain weight 😜)
so all though it’s not a lot of weight I’m keen to loose it before it becomes a problem. So I’m working a little harder at the gym and watching what I eat. So I made these healthy pancakes this morning and thought you might like the recipe. So you can still get your pancake fix if your watching your weight or just want to be healthy.
2/3 cup buckwheat flour
2/3 cup white rice flour
2 teaspoons baking powder
2 teaspoons maple syrup or rice malt syrup
1 teaspoon vanilla extract
1 cup milk of your choice
in one bowl mix your dry ingredients together. Then make a well in the centre and add all your wet ingredients. Mix until smooth. Then cook in non stickfrypan over medium heat. Use a cooking spray to prevent sticking. Cook 1/4 cup mix per pancake. Serve with your favourite toppings.
